Chocolate Tofu Tart
“This recipe was sort after by the actress Demi Moore, her agent contacted the café Mondo Organics in Sydney for the recipe. My sister then found it on the internet.  It has since become one of our favourites, really yummy and no one believes it’s mostly made from tofu”.

Cook time 30 mins

Ingredients:
1- 2 packets silken tofu
1 tablespoon of honey
350g cooking chocolate
1 quality pie crust

“If you want it richer, use two packets of cooking chocolate instead of the one.  And tastier, buy one almond flavoured tofu and one plain.  Two almond tofu can make it too sweet.”

*note, original recipe says 3 tablespoons of honey.  I always use 1 tablespoon and have found it to be enough.  My sister used the original recipe and said it was too sweet.

To Make:
Roughly chop tofu
Put the tofu into a blender with the honey and blend until smooth
Melt chocolate in double boiler, stirring frequently.
Add melted chocolate to blended tofu and re blend.  It may take some effort and time to get the chocolate to blend completely.

Pour into pie crust.  Chill until set, usually a few hours.

Alternative ways:  serve in tall glass with fresh strawberries drenched with cointreau, poured over the top of coffee soaked sponge biscuits and served with cream. 
Or
Serve over warm red wine poached pears.

Biscuit Base:
1 Packet arrowroot biscuits for the base
blend packet
add 2 table spoons butter melted – can use rice cookies for gluten free cake, need more than 1 packet.
